When to Plant Onions: As Early as You Can, Not Earlier

As soon as the soil can be worked — onions are the hardiest thing you grow. But not earlier: a cold snap won't kill them, it makes them bolt and put up a flower instead of a bulb. And bulbing starts on day length, not on your planting date, so a late onion is a small one.

Onions are the hardiest thing in your garden

Most planting advice is a queue behind one date. Onions are not in that queue.

Illinois Extension sorts vegetables by what they can take, and onions are in the top group: "Very hardy vegetables withstand freezing temperatures and hard frosts without injury and are usually planted between March 25 and April 10."

Without injury. Not survive-with-damage, which is where potatoes sit — their tops blacken in a frost and regrow. Onions in that class go through a hard frost and carry on. So the answer to when you can plant them is genuinely, as Maryland puts it, "in early spring as soon as you can cultivate your garden."

Which raises an obvious question: if they can take that, why not plant them in February?

Because you can still be too early, and cold is not the reason

University of Maryland Extension, in one sentence that changes the whole calculation: "Planting too early, with exposure to cold temperatures, can cause seed stalk development."

Cold does not kill an onion. It makes it bolt. A seed stalk is the plant deciding it has been through a winter and it is time to flower — and a plant that is making a flower is not filling a bulb. The energy goes up the stalk instead of into the ground.

And it cannot be undone. Maryland says what causes it and does not say what to do about it afterwards, so we will not pretend to a fix — the switch from filling a bulb to making seed is not one the plant reverses. What is ours rather than theirs, and worth saying as ours: we would eat the bolted ones first and store the ones that never flowered, on the general principle that a plant which has spent the season making seed has not spent it making a keeper.

None of our sources gives a temperature or a duration for it, so we are not going to invent one. What Maryland gives is the shape: too early is a real mistake with a real cost, and it looks nothing like frost damage.

The other end of the window is a clock you do not control

Here is the part that catches people who did everything else right.

University of Minnesota Extension: "Storage onions grown in Minnesota generally are long-day types that require 14 or more hours of daylight to form bulbs."

Bulbing is triggered by day length, not by how long the plant has been growing. The onion is not counting days since you planted it — it is waiting for the light, and when the light arrives it switches from making leaves to making a bulb, ready or not.

So the bulb you get is the size the plant had reached on the day the daylight hit its trigger. Every week you plant late is a week of leaf growth you do not get, and there is no way to make it up afterwards because the switch has already flipped. Minnesota adds the other half of the same mechanism: "Overcast skies and cool temperatures during the growing season will delay bulb formation."

This is also why onions are not a succession crop. Our own plant record marks succession planting structurally not applicable for bulb onions for exactly this reason — one trigger, one season, one harvest.

And the wrong type gives a small onion however well you grow it

Long-day, short-day and intermediate are not marketing words on the packet. They are the number of daylight hours that flips the switch, and it has to match your latitude.

Minnesota again, on what happens when it does not: "Sweet or mild onions are short-day onions. Although you can grow them in Minnesota, they will generally develop small bulbs." A short-day onion in the north gets its trigger far too early in the season, while the plant is still small, and it bulbs anyway.

We are not going to print a map of states to onion types. It is a cultivar-level property, our own plant records deliberately decline to force it into a field, and a table like that would be wrong somewhere the first week it was published. The seed packet or the set supplier says which type it is, and that is the one place the answer is reliably right. If you are in the north, look for long-day. In the south, short-day. In the middle, intermediate — and buy from somebody who states it.

Sets, transplants or seed

Three ways in, and they do not want the same conditions.

How deep, and the one instruction people skip

Minnesota, for seed: "Sow seeds in a 2-inch wide band 1/4 to 1/2 inch deep in rows 12 to 18 inches apart. After seedlings emerge, thin to 3 to 4 inches apart."

The thinning is the instruction people skip. Minnesota gives the three to four inches and does not spell out the consequence of ignoring it; the reading that an unthinned row gives you a row of small onions is ours, and it follows from the spacing figure rather than being stated beside it.

And your zone tells you none of it

A hardiness zone describes the average coldest night of your winter. For onions it answers a question you did not ask twice over: cold is not what limits them, and the thing that does limit them — hours of daylight — is set by your latitude, which a zone does not describe.

Zones are drawn by winter cold, which runs in bands that follow elevation and coast as much as latitude — so two gardens with the same zone number can sit a long way apart north to south, with different day lengths and the same zone. We have not measured that distance and are not going to put a number on it. When the bulbs are ready, the sign is the same one their close relative gives — the tops go over. Utah State: "Leave bulb onions in the ground until the tops fall over."

Onion planting questions people actually ask

Can you plant onions too early?

Yes, and not for the reason you would expect. Maryland: planting too early, with exposure to cold temperatures, can cause seed stalk development. Cold does not damage them — Illinois classes onions among vegetables that withstand hard frosts without injury — it makes them bolt, and a bolting onion makes a flower instead of a bulb.

Why are my onions small?

One of the three is sourced and two follow from it. Minnesota notes short-day onions grown in the north generally develop small bulbs, which is the wrong-type case. The other two follow from the same mechanism rather than from a source: planted late, so the plant was small when day length triggered bulbing, and never thinned to the three or four inches Minnesota specifies.

When do you plant onion sets?

In spring, for bulb onions, as soon as you can work the soil. Maryland notes that fall planting of sets is for perennial or multiplier types rather than ordinary bulb onions, which is a distinction worth catching before you put a tray of sets in during October.

What is the difference between long-day and short-day onions?

The hours of daylight that trigger bulbing. Minnesota puts long-day storage types at 14 or more hours. Match the type to your latitude — long-day in the north, short-day in the south — because a mismatch bulbs at the wrong moment and gives you a small onion whatever else you do.
